Their operation has since moved to West Sussex, where they brew small batches using traditional methods. A SCOBY culture goes into premium loose leaf tea, ferments for up to two weeks, then gets flavoured with organic ingredients. The result stays raw and unpasteurised, which preserves the probiotic cultures that make kombucha interesting in the first place.

They provide paid work placements to survivors of exploitation and trauma, and the HOLOS Foundation receives a donation from every can of their sparkling tea sold.
