About This Drink
Raspberry and elderflower is one of the more approachable flavour combinations in the HOLOS kombucha range: familiar, fruit-led, and lighter in character than the ginger or hop variants. The base is the same organic tea blend fermented with a live SCOBY in West Sussex, left unpasteurised, with raspberry and elderflower added post-fermentation. The pour is rose-amber with gentle effervescence. The aroma is fruit-forward and floral: ripe raspberry up front, a hint of elderflower blossom, clean tea underneath. On the palate the fruit comes through bright and juicy, with the natural tartness of fermentation keeping sweetness in check. Elderflower lifts the mid-palate without dominating. The finish is soft and floral. It is the safest introduction to the HOLOS range for someone new to kombucha. The flavour profile is easy to place, and the fruit masks some of the fermented tartness that can catch people off-guard with other styles.
