A Champagne-inspired sparkling tea brewed from Tie Guan Yin oolong, fermented with grape seed and aged over toasted oak.

About This Drink

Tie Guan Yin is an oolong grown in Fujian province in China, and it brings a distinct character to this: floral, stone-fruited, with a natural acidity that's quite different from the green or black teas used elsewhere in the REAL range. Fermenting it with grape seed and then ageing over toasted oak takes it somewhere that few alcohol-free drinks attempt. The bubbles are fine and persistent. The nose opens with orchard fruit and blossom: apple, pear skin, fresh citrus. On the palate the acidity is focused and precise, the apple and pear flavours clean and defined, with a light brioche quality coming in from the oak. It has textural weight that the name promises and the production genuinely delivers. The finish is dry, with a faint toasty note. This is REAL's most complex drink. It's the one to reach for if you want something that holds its own in a flute alongside a glass of actual Champagne.
