Square Root releases this one only when the bergamot harvest is at its best. The fruit comes from untreated trees in Southern Italy, and both zest and juice go into the recipe. Bergamot is the citrus behind Earl Grey tea, and that same quality comes through here: lifted citrus blossom, more aromatic and floral than a regular lemon soda, with a soft bittersweet character threading through to the finish. The pour is clear and pale gold. On the nose there is fresh lemon peel and citrus blossom. On the palate, juicy bergamot leads, softened by light sweetness, with herbal and tea-like notes in the background. The carbonation is moderate and clean. Good on its own or as a long mixer alongside a botanical spirit.
