About This Drink
Savyll's Bellini comes in a 250ml slim can with peach juice concentrate and white grape as the base. The format positions it squarely as a ready-pour substitute for the classic Italian aperitivo. Poured into a flute it looks the part: pale golden, gently fizzing. The aroma is clean white peach with a faint grape note underneath. On the palate, ripe peach does most of the work, carried by moderate carbonation with a soft sweetness from the grape. Malic acid keeps the finish tidy rather than cloying. It sits on the sweeter side but is balanced enough to drink as an aperitivo rather than a dessert drink. At 33 calories per 100ml with under 4g of sugar, it's about as lean as this kind of drink gets. The vegetable glycerine in the recipe gives a slightly smooth texture that helps it pass as a proper drink rather than a diluted fruit squash.
