About This Drink
Dr. Zenzen is based in the Mosel region of Germany and the production method here is worth noting. The wine is gently warmed to around 30°C, the volatile aromatic compounds are captured and held separately, and then the alcohol is removed by complete distillation before those same aromatics are put back into the wine. The point is to avoid the flat, cooked character that cheaper dealcoholisation can leave behind. In the glass it pours pale straw with a faint green tinge. There's lemon peel and white peach on the nose, light and clean without being particularly complex. On the palate, citrus comes first with a gentle peach note behind it. The body is light with a slight lift from carbonation, and the finish is soft and short. It lacks the acidity structure of an alcoholic white, so it doesn't develop much in the glass. Serve it very cold.
