About This Drink
Maison SASSY has been making cider in Normandy for generations, rooted in the Château de Sassy estate. This 0.0% version draws on five bittersweet apple varieties grown in the orchards around the estate: Bedan, Doux Normandie, Frequin, Douce Moën, and Douce Coët Ligné. The apples are freshly pressed, fermented in the traditional Norman fashion, then dealcoholised by reverse osmosis. No added sugar, no concentrate, nothing artificial. In the glass it pours pale golden straw with fine persistent bubbles. The nose is fresh-pressed apple juice and orchard blossom with a faint earthy, bittersweet undertone typical of Norman cider apples. On the palate it sits in semi-dry territory: there's genuine tannin grip from the apple blend, clean acidity, and enough structure to hold its own. Most alcohol-free ciders are thin and sweet. This one isn't. The complexity comes from blending apples grown in different soils. Those from woodland edges bring sharper acidity; those from silty-clay plains add softer sweetness. The result is more layered than you'd expect from something this light in body.
