About This Drink
The Very Cautious One Shiraz is De Bortoli's more serious dealcoholised red. It comes from South Eastern Australia and is dealcoholised using SIGMATEC vacuum distillation, which strips out the alcohol at low temperatures to preserve the wine's natural aromas and structure. In the glass it pours ruby red. The nose is exactly what you'd expect from Australian Shiraz: ripe blackberry, dark plum and warm spice, with a round, approachable quality. On the palate the ripe dark fruit dominates, with soft tannins and enough structure to stop it reading as flat or thin. There's no harsh acidity at the finish, which is a common failing in dealcoholised reds. Serve at room temperature or slightly below, around 14-16°C. It holds up alongside roasted meats and rich pasta dishes.
