About This Drink
Vinified traditionally before spinning cone technology removes the alcohol at low temperature, keeping the structure and natural aromatics. It's the same South Australian fruit base as the rosé, just going in a different direction. Pale straw in the glass with bubbles that hold up reasonably well. Green apple and citrus peel on the nose, fairly clean and straightforward. On the palate, bright acidity is the main event: ripe apple and lemon fruit balanced by enough residual fruitiness to stop it tasting austere despite the brut label. The finish is crisp and dry.
