Made at Oremandsgaard in Denmark, one of the country's oldest organic estates, using pesticide-free water from the property. The botanical build follows the London Dry template: sun-dried juniper from Southern Europe as the foundation, coriander seeds from Provence, Seville orange peel and peppercorn. The alcohol warmth that gin normally carries is replicated through a proprietary distillate made from chili seed shells. Clean juniper comes first in the glass, with a faint citrus lift from the orange peel. Coriander adds gentle aromatic warmth and depth, and the bitter orange rounds things out. The chili seed distillate delivers a soft, satisfying heat on the finish that makes the drink feel complete rather than thin. Over ice with a quality tonic it holds up convincingly. Built for gin cocktails and long serves. Particularly strong in a simple G&T with quality Indian tonic and a sprig of rosemary.
