About This Drink
Eclat starts with de-alcoholised wine from the La Mancha plateau in central Spain. Once the alcohol is removed, the base is blended with elderflower, ginger, and lemon juice concentrates, then carbonated for a minimum of 24 hours to build its fine, persistent bubbles. It pours bright and clear with a pale straw tint. Elderflower and lemon are the dominant notes on the nose, with ginger sitting quietly underneath. On the palate it is clean and light, the citrus and floral character coming through clearly, with the carbonation providing most of the structure. The finish is crisp without any residual sweetness. At under 7 calories per 100ml it is one of the lightest sparkling options around, alcohol-free or otherwise. The calorie count is the standout spec here: the flavour profile is pleasant but not particularly complex.
