About This Drink
Bobal is an unusual choice for rosé - it's more commonly used for full-bodied Spanish reds - but it works well here. The grape brings red summer fruit character that comes through clearly after the alcohol has been removed via low-temperature vacuum distillation, a process that's gentler on aromatics than conventional methods. In the glass it's a bright rose pink. The nose is fresh, with ripe peach underneath the red fruit. Redcurrant and raspberry drive the palate, with some white stone fruit in the background and a herbaceous thread through the mid-palate. The acidity is vibrant, which keeps it from feeling flat, and the finish has more length and texture than you'd expect from an alcohol-free wine.
