De-alcoholised spirit built around tart rhubarb and warming ginger, made from Whitley Neill's Rhubarb & Ginger gin using a spinning cone still.
About This Drink
Made using a spinning cone vacuum column still, the only one in the UK, Whitley Neill's process strips the alcohol from their base gin while keeping the flavour and aroma compounds intact. The original Rhubarb & Ginger gin goes in; the water and aroma streams come back out at zero ABV. In the glass, it pours clear with a faint golden tint. The nose is fresh and a little tart, with stewed rhubarb sitting above a distinct ginger warmth. On the palate, the rhubarb brings a crisp, slightly sharp edge before the ginger builds slowly across the mid-palate. The sweetness is restrained. The finish is short and warming, with the ginger lingering longer than the fruit.
