Midnight Sun is the second in Salcombe's New London Light range, and it takes its cues from Nordic coastlines rather than the juniper-forward tradition that First Light inhabits. Elderberries, seaberries, lingonberries, kelp, samphire, Icelandic moss, pine and alexanders go through the same rotary vacuum distillation process as the rest of the range, preserving the flavour once the alcohol is removed. Seven further natural flavours are blended in afterwards, and kombucha stabilises the whole thing. The colour is a pale blush pink. There's elderflower and fresh pine on the nose, then the berries come through on the palate, sweet but not cloying, with a faint briny quality from the kelp and samphire underneath. The finish is long for a non-alcoholic spirit, with the berries and pine holding on, and a quiet saline note from the coastal botanicals. It's the softer and more unusual of the two main New London Light expressions, and works well on its own over ice or with sparkling water for anyone who finds gin alternatives too juniper-heavy.

Water, grape juice from concentrate, kombucha, natural botanical distillates and extracts. Acids: tartaric and malic. Acidity regulator: sodium citrate. Preservatives: potassium sorbate and sodium benzoate. Thickener: xanthan gum.
