
Sparkling White NV
A dealcoholised sparkling white made from organic Macabeo grapes in central Spain, with green apple, elderflower and a fine persistent mousse.

Macabeo is a workhorse Spanish white grape that doesn't always get much credit, but it has enough natural freshness and citrus character to work well in a sparkling format. The grapes are grown organically in central Spain and vinified in the traditional way before the alcohol is removed using a proprietary dealcoholisation process. The result pours a yellow-green straw with a fine, well-sustained mousse. Elderflower and green apple come through on the nose. On the palate there's crisp apple, some citrus, and a hint of lemon thyme running underneath, with brioche notes emerging on the finish. The bubbles are creamy rather than sharp, which gives it a more rounded feel than some alcohol-free sparkling wines manage. The finish is clean and reasonably long.
