Square Root's take on the mojito uses three lime components: sun-dried black limes for a deeper, more complex citrus note, kaffir lime leaf for fragrance, and fresh lime juice for the sharp hit. The mint comes from a cold syrup steeped for 24 hours, which gives it a cleaner, more natural character than mint extracts tend to produce. In the glass it's a clear pale gold. The nose is fresh mint and lime zest, with the sun-dried lime adding something slightly savoury underneath. On the palate, mint and citrus arrive together, sweetened by raw cane sugar but not overloaded. It's lighter and less cloying than most non-alcoholic mojito alternatives. No artificial additives.
