Square Root's Non-Alcoholic Negroni aims at the flavour profile of the classic aperitif: bitter, aromatic, citrus-forward, and ruby red. They build it from steam-distilled botanicals, grapefruit and orange juice, raspberry and blackcurrant juices, balsamic vinegar, spices, and natural quinine. The ingredient list is longer than a cocktail, but the intention is clear. In the glass it's a clear ruby red with garnet tones. The aroma covers grapefruit citrus, bitter orange peel, aromatic spice, and a background berry note from the fruit juices. On the palate it's crisp and bitter, with the quinine and spice giving it some genuine complexity. The balsamic vinegar adds a savoury edge that most non-alcoholic alternatives miss entirely. It won't replicate the warmth that gin or vermouth brings, but as alcohol-free aperitif RTDs go, the flavour depth is above average. Serve cold over ice with a slice of orange.
