Spice 94 is the most intensely aromatic of the Seedlip expressions. Each botanical goes through a six-week maceration before being distilled individually in copper pot stills and then blended. The cascarilla bark and oak are the distinguishing elements here: they push the finish into genuinely bitter territory that most non-alcoholic spirits don't reach. On the nose it reads like a winter kitchen: allspice and cardamom upfront, then cinnamon, a hint of nutmeg, and dried citrus from the grapefruit and lemon peel. There's a cola-like quality underneath, largely from the oak and bark. On the palate the spice comes through clearly, with citrus providing some lift before the long, dry, bitter finish takes over. The mouthfeel is light and clean, which means it works well lengthened with tonic. The bitterness in the finish means it pairs better with simpler mixers rather than anything sweet, where it can get lost.
