About This Drink
The production process here is genuinely unusual for the non-alcoholic spirits category. Blue agave is hand-harvested by jimadors in the Jaliscan highlands, the pinas are cooked in traditional hornos, and the resulting nectar is rested against aged oak casks rather than in them. That step keeps the colour crystal clear while adding a subtle rounding quality. The flavour follows the method: clean agave up front, a light citrus note, and gentle oakiness underneath. It's lighter bodied than an alcoholic blanco, which is to be expected, but it avoids the hollow sweetness or artificial aftertaste that catches out a lot of non-alcoholic spirits. The finish is dry and fades slowly with a trace of citrus. Under 0.5% ABV, made with all-natural ingredients. Holds up well in a margarita or paloma without needing any significant adjustment.
