A 0.5% IPA from the Alloa-based Williams Bros. brewery, brewed with Thiolised yeast to unlock more tropical fruit character than standard AF brewing typically allows.
About This Drink
The Thiolised yeast is the interesting part here. Most AF IPAs lose a lot of their fruit character when alcohol is removed, because alcohol carries flavour compounds. Williams Bros. sidestep that problem by using a yeast strain that frees up additional tropical thiols during fermentation itself, so the beer arrives with more mango and citrus brightness than you'd expect at 0.5%. The result is a pale, lightly hazy pour with a biscuity malt backbone from the grain bill of Pale Malt, Oats, Vienna Malt and Pale Crystal. Citra and Mosaic bring the tropical fruit forward, while Cascade and Chinook add herbal and piney resin underneath. The bitterness sits at 30 IBUs, which is enough to give it some structure without being aggressive. Finish is dry with citrus peel and low-level resinous bite. It's a credible AF IPA. The hop character holds up better than most at this ABV, and the dryish finish keeps it from tasting sweet or flat. Worth seeking out if you're after something with genuine hop presence rather than just the idea of it.
