About This Drink
The Dark Caribbean Blend earns its name. Ginger and bitter dark chocolate lead on both nose and palate, and there's genuine depth here rather than the flat sweetness you get from a lot of AF spirits. Dried mango and caramel come through underneath, along with muscovado richness. What holds it together is the tension between the bitter edge and the sweet base. It doesn't tip into candy territory, and the long ginger finish gives it a backbone worth building around. Cola is the easy serve, but ginger beer is better — it echoes and extends the ginger rather than fighting it. A squeeze of lime sharpens the whole thing considerably. Mix at 3:1.
