About This Drink
Pinot Blanc and Silvaner from Rheingau, fermented in steel vats then dealcoholised via vacuum distillation at around 38 degrees Celsius. Rectified grape must concentrate is added back after dealcoholisation to restore body and roundness. The result is a sparkling white that reads as genuinely wine-like rather than grape juice with carbonation. Honey and soft citrus lead on the nose, followed by green apple, pear and a hint of peach. ISH classify the style as demi-sec, so there is perceptible sweetness, but the wine's clean acidity keeps each sip lively and stops it from feeling heavy. At 19 kcal and 3.9g sugar per 100ml it is a light option. Serve at 8-10 degrees Celsius. Pairs well with shellfish, spicy Asian food or as an aperitif.
