About This Drink
The grapes come from Rheingau in southern Germany, and after fermentation in steel vats the wine is dealcoholised via vacuum distillation at around 38 degrees Celsius. The Merlot and Pinot Noir blend gives the wine its natural salmon-pink hue, and both varieties contribute to the soft red fruit character. On the nose: ripe plum, strawberry and a lifted raspberry note. The palate is clean with focused acidity that keeps the fruit dry rather than jammy. ISH classify the style as Secco, meaning dry for a sparkling. At 20 kcal and 3.9g sugar per 100ml it is light. The acidity does its job here in making the wine feel more structured than many alcohol-free sparkling rosés manage. Serve chilled at 8-10 degrees. Works as an aperitif or alongside fresh salads, sushi and soft cheese.
