Airén is the dominant white grape of Castilla-La Mancha, central Spain, typically used for producing light, accessible wines. ISH dealcoholises it using the Spinning Cone Column technique, a gentle low-temperature process that strips the alcohol while protecting the wine's aromatic compounds. A touch of glycerol and grape must concentrate restore the body and roundness that dealcoholisation tends to reduce. The flavour sits at the approachable end: soft peach, balanced acidity and a grapefruit note that stops it from feeling cloying. At 24 kcal and 4.4g sugar per 100ml it is slightly richer than the other ISH sparkling wine variants. The style reads as somewhere between demi-sec and medium-sweet. If you are used to a brut sparkling wine this will feel noticeably softer. Serve chilled at 8-10 degrees. Works well as an easy aperitif.
