About This Drink

The Darling wine region sits on South Africa's cool Atlantic coast, and the winery grows dryland bush vines without irrigation. The Sauvignon Blanc is vinified as a conventional white wine before alcohol removal via spinning cone under vacuum at low temperature, then CO2 is added to create the sparkle. The result is pale straw with fine, persistent bubbles. The nose is clean: green apple, sweet pear, a faint citrus lift. The palate is light-bodied with a gentle off-dry quality from natural residual sugar, kept in check by crisp acidity. The effervescence gives it texture without being aggressive, and the finish is clean and reasonably sustained. Works well as an aperitif or with light food.
