Marine is built from 16 botanicals chosen specifically for their marine and coastal associations. Kelp and dulse seaweed sit alongside juniper, bergamot, sea buckthorn and olive leaf. The result is pale gold with a faint green tint and a light, silky texture. The nose leans coastal: bergamot and juniper are the clearest notes, backed by something that reads as sea spray and a faint herbal olive grove quality. It's clean without being sparse. On the palate, the seaweed adds an umami saltiness that's unusual and works better than it sounds. Sea buckthorn brings a tart, slightly tropical fruitiness that offsets the brine. The finish is citrusy with a salty olive character and light pepper. It's clearly aimed at gin drinkers and holds up well over ice with tonic. The saline element is the most distinctive thing about it.
