About This Drink
Carl Jung The Herby is an unusual entry in the brand's range. Rather than a straightforward dealcoholised varietal, it takes a white wine base, removes the alcohol via the brand's vacuum process, and adds extracts of oregano, thyme and ginger. The result is a lightly sparkling drink that sits somewhere between a table wine and a botanical infusion. On the nose the herbs are immediately apparent. Oregano and thyme give it a Mediterranean character, with ginger adding a gentle heat underneath. The palate is fresh and clean, the herbal notes carrying through, with a lightly sweet white wine base providing some roundness. Carbonation is fine and subtle. The finish is clean and herbal, with thyme and ginger lingering. Nothing else in the Carl Jung range tastes like this. If the idea of a savoury, herb-led wine appeals, it is worth trying. If you want something closer to a conventional white, there are plenty of other options in the range.
