About This Drink
Alcohol is removed by vacuum distillation at around 30°C, low enough that the delicate aromas don't cook off in the process. That matters more for a sparkling wine than most: the aromatics are the main event, and they're largely intact here. Pours bright lemon with green reflections and a persistent stream of fine bubbles. The nose is fresh: ripe apple, pear, and citrus. On the palate it's light and lively, with yellow fruit and a balance of gentle sweetness against clean acidity. Not complex, but it holds together well and avoids the flat, slightly strange quality that can afflict dealcoholised sparkling wines.
