Ginger kombucha is a well-worn flavour pairing, and Equinox does a decent version of it. Brewed from organic Chun-Mee green tea and fermented with a live culture, then blended with organic ginger juice. The result is sharper and less sweet than ginger beer, and more assertive than ginger-flavoured soft drinks. The ginger heat builds as you drink it rather than hitting all at once. The kombucha acidity sharpens the finish. There is not much sweetness to speak of. The fizz is light and consistent. Equinox make two ginger products: this raw bottled version and the Fiery Ginger can, which is lightly pasteurised. This one retains live cultures from the fermentation itself rather than having probiotics added back in.
