Eisberg Signature Cabernet Sauvignon is made from Cabernet Sauvignon grapes and dealcoholised by vacuum distillation. One detail worth knowing: grape must is added back into the wine after the alcohol is removed, which is a common practice in the category and helps restore some of the body and sweetness that dealcoholisation can strip out. The taste notes lean dark: cassis, blackberry, cherry, and plum are all present. The aroma has a little spice and oak alongside the fruit. The mouthfeel is light and smooth with gentle tannins, which is typical of this style. The finish is noted as slightly sour and light, which is honest. Dealcoholised reds can often end up a little sharp where the acidity becomes more prominent without alcohol to balance it. It's a decent approximation of a light-bodied red.
