About This Drink
Fre's Cabernet Sauvignon goes through conventional fermentation before the alcohol is extracted at low temperature using a spinning cone column. The recovered aromatics are then blended back into the dealcoholised base wine along with unfermented grape juice, which adds body and sweetness in place of tannin structure. ABV sits below 0.2%. It pours deep ruby. Dark cherry and blackberry drive the nose, with some warmth from berry spice. On the palate there's a rounded, fruit-forward quality that comes from the blended grape juice rather than any real grip from tannins. The finish is juicy rather than dry, so expect sweetness to sit alongside the fruit character. This one suits food. Steak, strong cheeses or anything rich will give the sweet-edged fruit something to push against.
