Rhubarb is a tricky base for a drink because it's intensely tart and slightly earthy rather than sweet and approachable. Belvoir use both fresh rhubarb juice and concentrate, which gives it a genuine rhubarb character rather than a sanitised version. Ginger extract adds heat and spice, and quinine brings the bitter dryness you'd expect from tonic water. Juniper botanicals round out the G&T framing without pushing it into territory where it's pretending to be a gin substitute. It pours pale pink with lively carbonation. The aroma is earthy rhubarb with ginger coming through. On the palate, tartness hits first, softened by sugar but not overwhelmed by it. Ginger spice builds through the mid-palate, and the finish is dry and bitter from the quinine. Complex for a soft drink.
