About This Drink
South Australian Shiraz, dealcoholised via high vacuum low pressure distillation. The low-temperature process is meant to preserve the variety's characteristic depth while removing the alcohol entirely, leaving a wine that sits below 0.5% ABV. It pours a deep ruby-purple. The nose has dark cherry and blackberry up front, with cocoa and vanilla sitting behind the fruit rather than dominating it. On the palate it is soft and reasonably rounded, with bramble fruit and gentle tannins that give some structure without bitterness. There is a touch of oak through the mid-palate. The finish is dry and clean, with some dark fruit lingering briefly. It suits food with weight to it. Serve slightly cool.
