Eisberg Sauvignon Blanc 0.0% is processed at a low temperature, around 30 degrees, using vacuum distillation. The low-heat approach is intended to protect the varietal aromas that make Sauvignon Blanc distinctive, and there's reasonable evidence it works here. Gooseberry and fresh cut grass are the most prominent notes on the nose, alongside lemon and a hint of tropical fruit. The palate is crisp and light-bodied, with lemon zest and green fruit carrying through to a dry, zesty finish with some genuine length to it. The acidity is lively, which helps it avoid the flat, slightly sweet trap that some dealcoholised whites fall into. Of the Eisberg still whites, this one has the most varietal character. Sauvignon Blanc's naturally high acidity and assertive aromatics translate better through the dealcoholisation process than more subtle varieties tend to.
