Vacuum distillation does the work here, pulling out the alcohol at low temperatures to preserve the varietal character. Sauvignon Blanc tends to be one of the more forgiving styles for dealcoholisation because the grape's acidity and aromatic intensity can survive the process reasonably well. This one leans into the tropical side: passion fruit and mango sit alongside the more classic grapefruit and gooseberry you'd expect from the grape. The mouthfeel is light and crisp, and the finish is balanced without going flabby. It's not going to fool anyone at a blind tasting, but as an M&S own-brand AF white it holds up well.
