The Cuvee Originale is Moderato's take on a classic Bordeaux blend. The three grapes bring different things: the Cabernets add structure and dark fruit intensity, while the Merlot softens it out. The dealcoholisation process uses vacuum evaporation at low temperatures, which helps preserve the aromatic compounds that would otherwise cook off. In the glass it is deep red. On the nose you get blackcurrant, blackberry, and some spice. The tannins are present but gentle, and the finish comes across as balanced rather than flat. It does not quite replicate the weight and warmth that alcohol gives red wine, but the structure is more convincing than most. If you want something to put on the table with a Sunday roast or a cheese board and not draw attention to itself, this does the job.
