MOMO steep organic elderflower with loose-leaf tea before the kombucha fermentation begins, rather than adding it as a flavouring afterwards. The result is more integrated than many floral kombuchas: the elderflower is clearly present but sits within the drink rather than on top of it. It's light-bodied with lively carbonation, and the flavour is gentle. Floral and herbal, with the underlying tang that's characteristic of live, unfiltered kombucha. The finish is clean. Brewed in small batches in London in glass jars and left unfiltered, so expect some natural sediment.
