About This Drink
Like the rest of the BOLLE range, this goes through a second fermentation after dealcoholisation, reintroducing fresh grape juice and yeast before CO2 is added for the sparkle. It's a more involved process than most AF sparkling wines, and you can tell. It pours light pink and clear. Strawberry leads on the nose, white rather than jammy, with red berries, blackcurrant and a touch of violet behind it. There's a faint herbal note that adds some savour. On the palate it's dry with medium acidity, and the summer fruit character follows through cleanly: strawberry and cherry, some earthy minerality, and those delicate herbal notes again in the background. The bubbles are fine and don't drop off quickly. The finish has a lingering berry note with a mineral edge. At 0% it holds its own against the growing field of alcohol-free sparkling rosés. The twice-fermented process gives it more going on than the simpler carbonated grape juice versions.
