About This Drink
BOLLE uses a patent-pending twice-fermented method: after the alcohol is removed via vacuum distillation, fresh grape juice and yeast go back in for a second fermentation. That extra step adds complexity that straightforward dealcoholised whites rarely achieve. In the glass it pours a clear gold. There's ripe apple and apricot on the nose, some lemon zest and grapefruit, and quieter tropical notes of pineapple and mango behind them. Florals sit in the background without dominating. The palate is medium-dry with a decent backbone of acidity, soft minerality through the middle, and a subtle creaminess from a hint of vanilla. Body is light to medium. The finish is clean and runs longer than you'd expect from the category. It's a white wine for people who actually want to drink white wine, not an approximation of one.
