GUTsy Captain Pomegranate uses natural pomegranate flavour and organic carrot concentrate added post-fermentation, building on the natural tartness of the kombucha base rather than fighting it. The combination works well because pomegranate's bittersweet complexity is a natural fit for fermented drinks. The colour is a warm rose-amber. On the nose there is a clear pomegranate note, floral and slightly astringent, with the clean sour edge of fermented tea underneath. On the palate the pomegranate reads as dry and tart rather than sweet, which suits the fermented base. There is a gentle tannic quality mid-palate before the finish turns clean with a lasting dry berry note. Among the GUTsy Captain range, it sits at the more complex, less sweet end. The mild astringency makes it a natural partner for food with some richness.
