Carl Jung's Riesling Feinherb is made from Rhine Riesling grapes and dealcoholised using the brand's vacuum method. Feinherb is a German style that sits between dry and medium-sweet: there is residual sweetness, but the natural acidity of Riesling holds it in check so it never feels cloying. The wine is pale straw. On the nose it has juicy apple, lemon and a hint of white peach — the kind of aromatic profile that good German Riesling tends to produce from cooler growing conditions. The palate has that harmonious acidity, with citrus and apple fruit balanced by the gentle sweetness. The finish is long and aromatic, which is where Riesling tends to show off. Among the Carl Jung whites, this is the most characterful. The feinherb style gives it more to work with than the straight Chardonnay, and the Riesling acidity means the sweetness never becomes a problem.
