The Very Cautious One Gewurztraminer Riesling
Dealcoholised blend of two aromatic Australian varieties, with lychee and citrus peel leading the way. The Gewurztraminer's perfume comes through clearly.
About This Drink
Gewurztraminer and Riesling is an unusual pairing for dealcoholised wine. De Bortoli uses SIGMATEC vacuum distillation to remove the alcohol at low temperatures, which is a sensible approach for such aroma-forward varieties as the process is gentler on the volatile compounds that give these grapes their character. The result is pale golden with a nose that leans hard into the Gewurztraminer: lychee upfront, with citrus peel and a soft floral quality. The Riesling brings structure rather than flavour, adding a clean line of acidity that stops the whole thing from feeling flabby or over-perfumed. On the palate it's light-bodied and crisp, with a smooth, citrus-tinged finish. Serve well-chilled. The aromatic character makes it a good match for spiced food.
