Moon Rabbit is Tartarus Beers' entry into the low-alcohol world, built on an imperial stout recipe with the fermentable sugars dialled back. It's fermented with LA-01, a yeast strain developed specifically for low-alcohol brewing, then conditioned on tonka and vanilla beans. Pour it and you get an opaque, near-black liquid with a soft caramel-brown head. The aroma leads with roasted grain and fresh-ground coffee, vanilla easing in underneath, and a thread of dark treacle at the edges. It's a proper stout nose. Roasted bitterness arrives first on the palate. This is a genuinely bitter dark beer at 0.5%, with coffee and burnt grain at the centre and bonfire toffee sweetness keeping things from turning austere. The mouthfeel is notably full for its strength, with low carbonation and a silky texture that holds the flavour well. The finish is long and dry, coffee-edged, with that tonka warmth coming through at the back.
